Easter Holidays in Malta

Easter is the most important feast in the calendar of the Roman Catholic Church. Maltese look forward to Easter with great enthusiasm as it brings various traditions back to life. On Maundy Thursday it’s a custom that Maltese visit churches and Last Supper displays. Good Friday is a Holy Day for Catholics, where Christians fast and make sacrifices. On Good Friday at 3pm, the time when Jesus died, a special mass is celebrated in churches around the island. After Mass, solemn processions are held in many towns showcasing life-size statues depicting scenes from the passion of Christ and adults and children wear costumes. Many tourists from all over the world visit our Maltese Island at this time of year to see our famous processions.

Easter Sunday is a day of rejoicing and celebration starting with a procession of the risen Christ to remind us that Jesus rose up from the death. At the end of these famous processions, men who are carrying the statue on their shoulders, usually run the steps leading to the Church as a reminder of Christ's Resurrection. Children eat Easter eggs and "figolla", an almond-based Maltese dessert traditionally prepared in time for Easter. This and more can be celebrated in Malta during your Easter Holidays.

In Love With His Job - Excelsior Hotel Malta Head Chef


Roger started his career in the kitchen as a commis chef way back in June 1991 in one of the leading four star hotels in Malta at the time. “Over the years I gained experience working in industrial kitchens, restaurants, catering companies and hotels around Malta and overseas. I had the opportunity to show my culinary skills in all sections of the kitchen until l I found my ideal role managing a large brigade of chefs - I am now the Executive Head Chef at the Grand Hotel Excelsior.”

Choosing a career in catering came naturally for Roger. "My family has always been involved in the gastronomy industry in Malta; the kitchen was always part of my life as a family concern. I was attracted to this environment from a young age and over the years spent long hours in industrial kitchens to get the feel of what it would be like to be a chef. Believe it or not I still get excited when entering a large kitchen."

After working his way up the career ladder by gaining hands on experience within this industry, Roger also had the opportunity to enrol in several culinary and management courses – both locally and overseas.

His explains that his experience is mostly in the hotel industry, working on large volume events, which is very different to the restaurant business where you cater for a fixed amount of covers. He points out that the hotel environment is seasonal and it fluctuates accordingly.

“The advantage is that one is able to explore new systems, trends and tastes accordingly. A challenge I thoroughly enjoyed was creating a buffet set up with a difference at the Grand Hotel Excelsior. Each night is themed, ensuring variety and novelty for our patrons. Together with my team of chefs we have achieved a strong and stable popularity within the local market and have also changed the international traveller’s perception regarding the food available on the Maltese islands. A report in the media recently stated that ‘The Excelsior’s offering is probably going to be up there among the best this winter’. My team and I work hard to ensure a superior offering. The hotel is famous for its magnificent structure and location but is mostly known for its outstanding culinary products.”

Roger professes to love all kinds of food and is always open to explore new flavours and fusion cuisine.

At home, however, he admits to taking a break from the kitchen since it is his wife who does most of the cooking.

"I only cook when we have guests."

When I ask him what he does to relax, he laughs, “Relax!? What is that? My mobile is always on – I am like a doctor on call. You can ask my team – whether on my off day or on holiday, I still know exactly what’s going on! Strictly speaking, in my position I can’t afford not to think about my kitchen.”

Excelsior Hotel Malta introduces the new al fresco Tiki Grill.

Tuesday 15th June 2010, Malta – The aroma of fresh fish and the gentle grilling of sizzling Rib Eye steaks await the Excelsior diner while the creations of the Pastry Chef await their dessert.

This is the Grand Hotel Excelsior’s new Tiki Grill which, as its name suggests, serves up a menu that offers 7 sizzling grills including fresh fish, beef rib eye steak, Souvlaki chicken skewers in a traditional Greek marinade, traditional Turkish lamb kebabs, tuna and swordfish steaks marinated with aromatic seasoning and spices with Texas-style new potatoes, Maltese pepperonata with green peppers, tomatoes, olives and capers. There’s anti-pasti to start. And to finish, those Pastry Chef creations make it a 3-course meal.

The new Tiki Grill is to be found next to the Excelsior’s outdoor pool and the Marxamxett Harbour, for those diners who seek a venue that favours al fresco menu variety during those long summer evenings. There’s no need to dress up for these nightly occasions. Now that summer has started, the dress code is simply casual in anticipation of some serious wining and dining in the cool of the evening air. As an Excelsior spokesman stated, the dress code for Tiki Grill may be casual but the cuisine and service remains 5-star. Just across from the Tiki Grill next to the marina, the Excelsior’s very own Yacht Club is open for lunch and dinner with pizza and pasta and other light dishes. The Tiki Grill is open from 8pm till late.
